that's my question: How to view pages side by side as it was a book?

Just one of the enormously long list of things that Pages 5 can not do but Pages '09 can.

Use Pages '09

Feature not available in any release of Pages v5 including v5.6.2. Use Pages '09, LibreOffice Writer, or export to PDF, and view in two-page mode.
